    Greek Yogurt Chicken Salad Sandwich

Katie G.:  This healthy version of chicken salad makes a perfect weekend lunch for the family. Kids will love the grapes, apples and craisins and you will love how simple and healthy it is to whip up using rotisserie chicken and Greek yogurt. Serve on whole wheat bread or let the little ones scoop onto crunchy crackers. Enjoy leftovers in work or school lunches for the rest of the week.

    One-Skillet Rotisserie Chicken Pot Pie

Shila:  Making chicken pot pie using rotisserie chicken is completely doable - and it's an easy one pot meal for the family, too! Just take a skillet and sauté some onions and garlic along with butter and flour. Throw in cubes of store-bought rotisserie chicken (skin off), frozen peas, a dash of spice, and cover with a thawed sheet of store-bought puff pastry. Break into the flaky golden crust for a warm and savory chicken dinner.

    Chicken Taquitos

Alexandra F.:  Taquitos are my go-to meal for using up leftover rotisserie chicken - even my picky eaters love them, and they are easy to make when you are short on time. Shred or cut the chicken into small pieces, roll some into a tortilla (corn is traditional but flour is also good), then fry it in vegetable oil about an inch deep. I warm the tortillas in the microwave covered with a damp paper towel to keep them from cracking, and a toothpick through each taquito helps hold it together when you first put it in the oil. Serve plain, with sliced avocado, shredded lettuce, salsa, cheese, crema or whatever you like!

    Chicken Fried Rice

Alexandra F.:  Ever since I discovered how easy it is to make fried rice, we've started buying rotisserie chicken whenever we are at Costco to make sure we have some to add to the fried rice we make almost every week. I started out using this recipe, and I like it, but I've realized that fried rice is one of those awesome pantry recipes you can easily adapt with whatever you have on hand, and that exact measurements are definitely not necessary if you want to keep things moving. Keep a bag of frozen peas and carrots on hand to make this an especially quick and easy meal! From Gimme Some Oven

    Rotisserie Chicken Baked Tostadas

Shila:  I like how this recipe for Rotisserie Chicken Baked Tostadas coat the chicken directly in salsa and fajita seasoning before toasting them on shells in the oven. The salsa contributes to a level of added moisture which is often helpful when using leftover rotisserie chicken. The chicken sits atop a thin layer of refried beans and cheese, and bakes for about 10 minutes. Top it off with any more of your favorite ingredients like shredded lettuce, sour cream and pico de gallo.

    White Rotisserie Chicken Chili

Shila:  An excellent family meal for busy weekdays, White Rotisserie Chicken Chili is made by simply simmering a handful of ingredients and spices together, including canned white beans, canned green chiles, frozen corn, and of course, shredded rotisserie chicken. Top off this one-pot meal with freshly-diced avocado, tortilla chips, cilantro and lime.

    Buffalo Chicken Pizza

Shila:  Many of my family's favorite recipes with rotisserie chicken include the use of BBQ sauce because its bold and tangy flavor does an excellent job quickly replacing any hint of the previously store-bought rotisserie flavor (i.e., oregano, rosemary, thyme, etc.). We like to shred up this leftover rotisserie chicken, dice it into cubes, drizzle it with sauce and make buffalo pizza.

    Leftover Rotisserie Chicken Nachos

Shila:  It's very simple to use leftover rotisserie chicken in nachos! We like to heat up the shredded chicken (meat only, skin off) on the stovetop along with the contents of a taco seasoning packet so it marinates in the Mexican spices a bit. Dress the tortilla chips with your family's favorite fixings like avocado, cheese, salsa, beans, jalapeños, and sour cream too! This can make an easy lunch or be creative after-school snack ideas.

Cheesy Buffalo Chicken Stuffed Peppers with Rotisserie Chicken

Shila:  Oven-baked stuffed bell peppers can be easily made with leftover rotisserie chicken. Start by hollowing a few sturdy and thick peppers, and fill the shells with your favorite ingredients plus cheese. To make this meal even tastier, try it with homemade buffalo sauce too! It's made by melting cream cheese with a dab of BBQ sauce and ranch seasoning. The shredded rotisserie chicken becomes caked into each creamy bite.

    Shredded Chicken Lettuce Wraps

Shila:  Sauté a skillet filled with crispy peppers and onions along with soy sauce, oyster sauce, vinegar, and sriracha to transform regular leftover rotisserie chicken into restaurant-inspired Asian chicken lettuce wraps.

    Chicken Bacon Ranch Pasta

Shila:  Pasta recipes with rotisserie chicken make great family meals. Simply throw-in shredded chicken to any one of your favorite pasta dishes for added protein and flavor. A favorite recipe of mine includes baking the dish in the oven along with alfredo sauce, bacon, a bit of ranch dressing, and cheese.
