    Genius Butternut Squash Soup

Kelly R:  I love making blended soups for my family, because they're easy and can discreetly contain a lot of healthful ingredients. This vegan butternut squash soup is delicious, and requires almost no effort. The squash goes into the oven whole (no squash cutting kitchen accidents!) and once roasted is pureed in the blender with coconut milk and a few other simple ingredients.

    Detox Chicken Soup

Kristy Pepping:  This soup is a huge hit for the entire family! It is super easy to make. I will add my family hates mushrooms and kale so this recipe can easily be modified. We added stewed tomatoes and zucchini instead.

    Carrot-Coconut Soup

Kelly R:  My kids love this soup, and doubling or tripling it is my favorite way to use up a big bag of carrots. It freezes really well for a quick and healthy weeknight dinner.

I substitute sweet chili sauce for the spicy kind the recipe calls for, but you could also leave it out with great results. From Bon Appétit

    Minestrone Soup

Kate Wille Murray:  Minestrone soup is a family favorite!

    1 lb mild Italian Sausage
    1tbs olive oil
    1 c diced onion
    a clove finely minced garlic
    1 cup sliced carrots
    1 tsp basil
    2 small zucchini sliced
    1 can Italian tomatoes, diced
    1 box beef broth
    1/4 tsp pepper
    2 cans Great Northern Beans
    1 cup tubettini pasta

Brown sausage and drain grease. Combine all ingredients expect beans and pasta. Bring to a boil. Cover and let simmer for 1 hour. Add beans and pasta and simmer for 10-15 minutes. Soup thickens on second day.
Roasted Cauliflower and White Cheddar Soup

Kelly R:  Roasting the cauliflower first for this recipe gives the soup such a complex and wonderful flavor, despite the relatively short ingredient list. It's worth the little bit of extra effort! We love this with a pretzel roll on the side for dunking. From Mel's Kitchen Cafe

    Black Bean Soup

Alexandra F.:  Even my picky eaters love this hearty black bean soup, which is so quick and easy to make that it has become a weeknight staple. The flavor is simple yet tasty, and the refried beans give the soup a really nice texture. Best of all are the toppings - guacamole, diced tomatoes and plenty of shredded cheese are favorites at our house! From LiveWell Network

    Taco Soup

Sue Krawitz Tandoc:  Taco soup is a hit for fans of traditional tacos while encouraging them to try foods in a new way. This recipe is easy and quick (30 minutes) to make and pairs well with cornbread, tortilla chips with salsa and guacamole, burritos, Mexican rice and more for a fun family dinner! From The Stay at Home Chef

    Lasagna Soup

Kelly R:  Some of the best soup recipes I've tried are inspired by complicated and indulgent meals, but transform them into one-pot wonders easy enough for a weeknight! This lasagna soup is one of my favorites. It has the classic lasagna taste that everyone loves, lightened up with chicken sausage and just a dollop of cheese on top. You can substitute a shorter pasta like rotini or bowties if the broken lasagna noodles are a little unwieldy for your kids. From Skinnytaste

    Traditional Old-Time Beef Stew

Alexandra F.:  Come winter, our family can't get enough of this hearty and delicious beef stew. I especially like that it's really easy to prepare, with the bulk of my time going to cutting the beef into small pieces. After that, it's mostly dumping all the ingredients into the pot, with minimal chopping. Even though prep time is minimal, be sure to leave plenty of time for simmering, and plan to start cooking at least a couple hours before you want to eat! From Paula Deen

    Japanese Miso Soup Recipe

Shila:  This recipe for Japanese Miso Soup is so simple and it's ready in 5 minutes! You also only need 5 authentic and simple ingredients (miso paste, broth, tofu, dried seaweed, scallions) that are very likely to be found at your grocery store. Our family enjoys pairing this soup with homemade fried rice and oven-crisp eggrolls. From A Spicy Perspective

    Perfect Potato Soup

Jaclyn Keifer:  We love many of her recipes. My husband is a soup snob and this is one of his favs. He usually makes a TON and we freeze it for later ❤️ From The Pioneer Woman

    Cheddar Corn Chowder with Bacon

Kelly R:  I love homemade soup recipes that call for blended cauliflower, because it gives a nice creamy texture (without the need for cream) and a hidden veggie nutrition boost. My family can't get enough of this decadent-tasting corn chowder. From Skinnytaste

    Rosemary Chicken Noodle Soup

Kelly R:  Earthy and fragrant rosemary makes this homemade chicken noodle soup taste like it took much more time than it really did! I keep coming back to this recipe because the flavor feels so much more special than your average chicken noodle, and it's easy to throw together using a rotisserie chicken. From Gimme Some Oven

    Vegan Lemon Chickpea Orzo Soup

Kelly R:  This kid-friendly vegetarian recipe comes together in minutes thanks to quick-cooking orzo and canned chickpeas. We love the bright zing of flavor from the lemon juice stirred in at the end! From Delish Knowledge
