If the last thing you want to do on a family trip is spend hours in the kitchen, check out these ideas for easy vacation meals!

Easy Ham & Cheese Sliders
These baked Hawaiian roll sliders are a crowd-pleasing easy family dinner that can be customized based on the whims of your picky eater, or whatever you happen to have on hand.
Ravioli Lasagna
You don't need a bunch of specialty ingredients to make a tasty lasagna. Frozen ravioli, ground beef, spaghetti sauce and shredded cheese are all you need to make this easy layered pasta recipe the kids can help make.
Chicken Caesar Wraps
Wrap store-bought bagged Caesar salad and chicken in a tortilla. This works great with leftover grilled chicken, frozen chicken strips, or even shredded rotisserie chicken. Serve with fruit for a well-rounded easy vacation meal!

If your rental has a slow cooker, pulled pork sandwiches are of the best easy meals for large groups on vacation, or when you want plenty of leftovers to use throughout the rest of your trip.
Bagels and Cream Cheese

There are many fresh and frozen options of bagels, many flavors of cream cheese, and a number of options to kick it up a bit -- peanut butter, strawberry or banana slices, lox, etc.

Shrimp Boil
Shrimp boil is a classic summer dinner, and it's an easy meal to make on vacation, especially if your destination has great seafood. Cleanup is easy because the shrimp, sausage, corn and potatoes all cook in the same pot, but just make sure your rental has a pot that's big enough. Make it a fun, communal eating experience with everyone digging in directly from a shared platter, and paper spread on the table.

One-Pan Pasta
This often-imitated one pan pasta from Martha Stewart is more fresh than a simple pasta with jarred sauce, but still quick and easy enough for a busy weeknight or vacation dinner.

Pizza Pasta Salad
This pizza pasta salad is best made a few hours in advance so it has time to marinate in the fridge, and the leftovers are great for lunches. It's an easy meal to make on vacation because you won't be left with a lot of partially-used ingredients.
